Wheat pastry flour is a low protein flour with less gluten than regular flour. Confectionery flour is a finely ground flour, ideal for making fluffy pastries, sponge cakes and fluffy cookies. Confectionery flour contains from 5 to 8 percent gluten protein, while premium and first grade flour contains from 10 to 13 percent. The more gluten protein, the denser the baked goods.
