Wheat wafer flour is produced from soft wheat varieties, specially selected with gluten of a certain quality. The use of wafer flour allows you to obtain light, airy wafer sheets due to the lower (compared to the highest grade) gluten content in the flour. Waffle flour contains a smaller amount (compared to the first grade) of bran substances and larger particles of endosperm, which pollutes the surface of waffle irons less and allows you to obtain a less viscous dough.
