First grade wheat flour is produced by one varietal grinding from soft wheat, consists of finely ground particles of the entire endosperm and 2-3% (of the flour weight) of crushed shells and aleurone layer. The flour particles are larger and less uniform in size than in premium flour. The color of the flour is white with a yellowish or grayish tint. It contains less starch, more proteins, vitamins and minerals. First grade flour is suitable for making bread, pancakes, pancakes, noodles, all kinds of pies and rolls. The dough made from this flour holds its shape perfectly and does not go stale for a long time.
